RED WINE
-VARIETAL: NEBBIOLO D'ALBA D.O.C. (100% Nebbiolo grape)
-PRODUCTION AREA: Santa Vittoria d' Alba, Cuneo (Piedmont)
-STRAIN: marly-sandstone with a prevalence of sandstone and a good content of limestone, clay and sand; poor in organic matter but rich in mineral salts.
-ALTITUDE: 315 m above sea level.
CLIMATE: temperate-cold, large temperature range between seasons due to the influence of the Alps and in particular of Monviso.
-GROWING SYSTEM: Guyot, with density of vines per hectare 7000-7500.
-HARVEST: manual at the end of October, beginning of November in small boxes.
-YIELD PER HECTARE OF GRAPE: 60 Qli/Ha.
-WINE-MAKING: traditional fermentation with indigenous yeasts for 10-30 days; spontaneous malolactic fermentation in stainless steel tanks.
-MATURATION: 12 months in French oak barrels of second passage.
-REFINIG: 6 months in bottle at controlled temperature before release for sale.
TASTING:
-COLOR: deep ruby red, with important orange nuances.
-PROFUME: delicate nose, ripe, sweet and sunny; notes of apricot and fig jam, tarocco oranges, overripe and spices.
-FLAVOUR: monumental mouthfeel, made of great fruitiness, round tannins, persuasive, silky and firm, all this supported by an important acidic texture.
-PARTICALITY: Excellent capacity of refinement / aging.
-ALCOHOL: 14,5% VOL.
-GASTRONOMIC PAIRING: it is perfectly suited to meat dishes even in complex or tasty preparations such as roasts like "The roast pork in sweet and sour sauce" or braised or even game dishes such as "The hare with juniper". It also goes very well with cheeses, especially the mature ones such as Castelmagno.
-SERVING TEMPERATURE: 18 - 20°C
