WHITE WINE
-VARIETAL: ROERO ARNEIS D.O.C.G. (100% Arneis grape)
-PRODUCTION AREA: Santa Vittoria d' Alba, Cuneo (Piedmont)
-SOIL: marly-sandstone with a prevalence of sandstone and a good content of limestone, clay and sand; poor in organic matter but rich in mineral salts.
-ALTITUDE: about 320 m above sea level.
CLIMATE: temperate-cold, great temperature range between seasons due to the influence of the Alps and in particular of Monviso.
VINEYARD SYSTEM: Guyot, with a density of 7000-7500 vines per hectare.
-HARVEST: manual at the end of September, in small boxes.
-YIELD PER HECTARE OF GRAPE: 60 Qli / Ha
-WINE-MAKING: maceration with skins for 3-4 days, alcoholic fermentation with indigenous yeasts for about 10-30 days, in stainless steel tanks.
-MATURATION: on fine lees for a minimum of 12 months (batonnage). in second/third passage barriques.
-REFINING: 6 months in 1.5 liter bottle at controlled temperature before release for sale.

TASTING:

-COLOR: deep straw yellow.
-PROFUME: vertical nose, straight like a rock face, mineral, balsamic; white flowers, vanilla, citrus and acacia honey to complete the majestic bouquet.
-FLAVOUR: in the mouth it is fresh, tannic, pleasantly acidic, very persistent, dry, dry and savory in the finish.
-PARTICULAR: Excellent aging/refining capabilities.
-ALCOHOL: 15,5% VOL.
-GASTRONOMIC MATCHING: it perfectly matches with starters, both seafood and vegetable based, but also with dishes based on shellfish or fish such as "sea bass in potato crust". It is also excellent with risotto, such as "risotto with zucchini" and with pasta dishes having delicate fillings. It also goes very well with white meats.
-SERVING TEMPERATURE: 10 -12 °C
